Beef cheeks are the heavily worked facial muscles of a cow. Because the animal uses these muscles constantly to chew, the meat is very tough when raw and is filled with connective tissue. When cooked low and slow, the collagen breaks down into gelatin, yielding incredibly tender, rich, and flavorful meat.
