A beef arm roast is an economical, flavorful cut from the cow’s shoulder. It often features a round bone and rich marbling, making it incredibly tender and juicy when cooked low and slow. It is perfect for pot roasts, beef ragu, or shredded beef dishes.
Best Cooking Methods
Because it comes from the shoulder (a heavily used muscle), an arm roast needs to be cooked slowly to break down the connective tissue.
- Braising / Pot Roast: Sear the roast in a hot Dutch oven, add a mix of beef broth, red wine, carrots, onions, and garlic, and braise in the oven at 300°F for 3 to 4 hours until it falls apart.
- Slow Cooker: Season the roast, sear it, and cook it on LOW for 8 hours (or HIGH for 4 hours) with your choice of vegetables and liquids.
- Smoking: Smoke at 225°F to 250°F until the internal temperature hits 170°F. Wrap it tightly in butcher paper with a spritz of apple cider vinegar or beef tallow, and continue cooking until it reaches an internal temperature of 200°F to 205°F.
