The New York Strip is a popular, premium cut of beef from the cow’s short loin. Known for its rich, beefy flavor and tender texture, it features a distinct strip of fat along one side that bastes the meat as it cooks. It is also commonly called a strip steak, Kansas City strip, or striploin.

Flavor and Texture: Because the muscle it is cut from does very little work, the NY Strip offers great tenderness while retaining a satisfying, meaty chew. It is not as melt-in-your-mouth soft as a filet mignon, nor is it as heavily marbled as a ribeye, but it offers a highly sought-after balance.
