“Dino ribs” is a popular barbecue nickname for beef plate short ribs. They get their name from their massive size and large bones, which resemble something a Tyrannosaurus Rex would eat.

These ribs are typically cut from the 6th, 7th, and 8th ribs of the cow, located in the “short plate” primal area (the lower part of the rib cage below the ribeye). A standard rack features three thick, meaty bones, often measuring up to 12 inches long and weighing anywhere from 5 to 8 pounds.
